Tengrinews.kz – The Ministry of Healthcare has approved an updated order regulating nutrition standards in healthcare and educational institutions.
The document establishes guidelines for meal organization, dietary regimes, food composition, and quality requirements.
Hospital nutrition
The order defines basic diets, which can be adjusted based on medical indications. Meals are prescribed by the attending physician, recorded in the patient's medical history, and forwarded to the hospital kitchen.
A four-meal daily schedule is introduced, with the possibility of increasing to six meals per day if necessary. The preparation of food is overseen by the head chef and a dietitian.
The use of GMO products, mechanically separated poultry meat, and collagen-containing raw materials is strictly prohibited. Sanitary regulations, food quality control, and medical examinations for staff are rigorously enforced.
What is allowed and prohibited in schools and kindergartens
In the education sector, standards cover menus, meal schedules, and food service formats (self-prepared meals, outsourcing, or catering). However, catering is prohibited for kindergartens.
New meal models have been introduced: a standard menu or a multiprofile menu with dish selection (buffet-style or lunch packs). The number of meals ranges from one to six per day, depending on the duration of children's stay. Medical staff monitor food quality, dietary compliance, and sanitary standards.
Strict quality and storage control
Special attention is given to food quality and storage. The use of GMOs, expired products, unmarked goods, or items stored improperly is strictly prohibited.
The diet must consist of 75% plant-based products, with limited salt and sugar content. The use of iodized salt is mandatory.
Approved ingredients
- Meat dishes can include horse meat, beef, chicken, and skinless turkey.
- Beverages include still water, dairy products, compotes, and fruit teas.
