Tengrinews.kz – Chef Gleb Astafyev and doctor Alexander Myasnikov have named a very healthy yet undeservedly underrated porridge, according to AIF.
According to them, it’s barley porridge (pearl barley). As the chef explained, it is actually made from barley grains, and its name comes from the fact that when cooked, the grains resemble pearls.
“It’s very healthy because it’s minimally processed. It’s low in calories and extremely rich in fiber. It’s one of the most beneficial porridges in terms of nutrients,” said Astafyev and Myasnikov.
At the same time, the experts advised avoiding traditional semolina porridge.
“Some porridges aren’t really porridges — they appeared historically when people tried to fight hunger and treat dystrophy. But that time has long passed. A good example of a harmful porridge is semolina. In fact, it’s not porridge at all but coarsely ground, refined flour,” noted the chef.
Myasnikov added that semolina contains almost nothing but starch. Experts recommend using it only as an additive or thickener in various dishes.
